Easy Back to School Breakfast Sausage Burritos Recipe

Ingredients

  • 1 lb turkey sausage 
  • 1 small onion chopped
  • 1/2 green pepper, chopped
  • 4 oz mushrooms 
  • 1-2 tbs olive oil
  • 6 large eggs
  • 8 veggie tortillas 
  • 1 cup shredded low-fat cheese

Directions

  1. In a large skillet, add olive oil over medium-high heat.
  2. Place turkey sausage in the large skillet
    • Brown turkey sausage 
  3. Sauté onions, green pepper, and mushrooms in skillet.
    • Until tender
  4. Add eggs to a bowl, and whisk
  5. Add whisked eggs to skillet with Turkey sausage and other ingredients.
    • Stir occasionally until cooked
  6. Divide the egg-turkey-sausage mixture among the veggie tortillas
  7. Add shredded cheese 
  8. Roll tortilla, in to a burrito
  9. Serve with salsa, and enjoy!

  1. Turkey sausage can be a healthy option because it has fewer calories and fat than pork sausage, and is high in protein, which is important for muscle growth and repair. It also contains vitamins and minerals like vitamin B6, vitamin B12, niacin, and selenium.
    1. However, processed meats like turkey sausage can be high in sodium, which can increase the risk of high blood pressure and heart disease. If you have diabetes or are watching your blood sugar levels, breakfast sausage burritos may not be the best choice.
