Cowboy Caviar Recipe

Ingredients 

  • 1 can black beans, drained & rinsed
  • 1/2 can corn, drained
  • 1 lg. tomato, chopped
  • 1/2 lg. avocado, diced
  • 1/4 med. red onion, chopped
  • 1/8 cup fresh cilantro, chopped
  • 1 jalapeno, seeded & chopped

Dressing:

  • 1/2 Tbsp. red wine vinegar
  • 2 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1/2 tbs salt
  • 1/4 tsp pepper

Directions

Combine all ingredients.

Cover and Chill.

Serve with tortilla chips, pita bread, or desired parings.

Things to consider about this recipe:

  • Black Beans are full of antioxidants that help protect cells and reduce risks of cancer, heart disease, and type 2 diabetes. They are also an amazing source of plant-based protein. The fiber embedded in them helps to prevent constipation as well as balance cholesterol levels
    • The high fibers can also cause bloating. It is helpful to drink a lot of water along with the beans to reduce this
    • Black beans also contain purines, which are attributed to kidney stones as well as gout. It is good to be cautious if you are at risk of these issues.
