Zucchini Boats

Ingredients 

  • 4 medium zucchini
  • 1 lb. ground turkey
  • 1 large onion, chopped
  • 1 large red pepper, chopped
  • 1 jalapeno pepper, minced
  • 1 1/4 cups soft bread crumbs
  • 1 large egg, beaten
  • 1 tbsp. dried parsley flakes
  • 1 tsp. dried basil
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 can (15 oz) tomato sauce, divided
  • 2 cups shredded mozzarella cheese

Directions

  1. In a large bowl, combine ground turkey, onion, peppers, bread crumbs, egg, and spices. Add 1/2 of the tomato sauce; mix well
  2. Halve zucchini lengthwise; scoop out seeds and fill with meat mixture; place in two 12x9 inch baking dishes. Spoon remaining tomato sauce over each. 
  3. Bake, uncovered, at 375 degrees until the zucchini is tender, about 45 minutes. Sprinkle with cheese during the last few minutes of baking.

Things to consider about this recipe: 

  • Zucchinis have a surplus of fiber and water that reduces constipation risk as well as providing hydration. They also contain lutein and zeaxanthin that protect the eyes from UV light damage and oxidative stress. With its richness of vitamin B6, it helps in regulating blood glucose levels.
    • However, they also contain Cucurbitacins that can cause nausea, vomiting and diarrhea if eaten in a surplus amount. 
    • Zucchinis also have oxalates that can be an issue for those with kidney or gallbladder problems
  • Ground Turkey is a great source of lean protein, it helps maintain muscle and supports the immune system. It is full of B vitamins, selenium, niacin, iron, zinc, potassium and phosphorus. 
    • It has a short shelf life, so when you purchase it, it best to use it as soon as possible to avoid spoilage and bacterial contaminations
