Yogurt Bark

Ingredients

  • 1 1/2 cups of plain greek yogurt
  • 2 cups fruit of choice
  • 1/2 cup topping of choice

Directions

  1. Line a rimmed baking sheet with wax or parchment paper.
  2. Add yogurt and fruit (or fruits) of choice into a blender and blend until smooth.
  3. Pour yogurt mixture into the sheet pan
  4. Top yogurt mixture with toppings of choice
  5. Freeze yogurt bark until solid, for about 1-3 hours

Multiple fruits can be blended into the yogurt like:

  • Strawberry + banana
  • Pineapple + mango
  • Blueberry + strawberry
  • Spinach + mango + pineapple

Toppings can include chocolate chips, granola, nuts and small pieces of fresh or frozen fruit.

Things to consider about this recipe: 

  • Greek yogurt is high in protein, which can help you feel full longer. It is also high in calcium and vitamin D, which can help build bone mass. You can customize yogurt bark with different fruits, toppings, and types of yogurt. For instance, strawberries and other fruits are high in fiber, which can help you feel full longer and regulate your blood sugar. 
    • However, Greek yogurt contains whey protein and lactose, a natural sugar, which can cause inflammation. It also contains natural hormones that can be harmful to people with hormonal imbalances.
