Pancit Recipe (Filipino rice noodles)

Pancit (Filipino rice noodles) with chicken and veggetables

Ingredients 

  • 1 bag of rice noodles
  • 1 cup of chopped cabbage (green or purple)
  • 1 cup of chopped green beans
  • 1 cup carrots, julienne or shredded
  • ½ pound chicken
  • 3 cups of chicken stock
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp pepper
  • 1 tsp salt

Directions

  1. Sautee onions and garlic until semi-translucent, about 5 minutes.
  2. After onions are cooked, add in chicken, salt, and pepper, and cook through.
  3. Add chicken broth, bring to a boil.
  4. Add green beans and carrots, cook until tender.
  5. Add cabbage, cook until it starts to wilt.
  6. Add in rice noodles, cook noodles until soft and have absorbed the liquid.
  7. Garnish with lemon, optional.

Things to consider about this recipe: 

  • Rice Noodles are a great substitute from regular noodles, providing a gluten-free option for those who have an intolerance to gluten or a celiac disease. They are also lower in sodium compared to regular noodles. The cabbage, green beans and onions in this recipe help to provide antioxidants to promote a healthy heart and protect cells from free radicals, as well as protein and fiber to lower cholesterol.
    • Rice noodles can unfortunately race blood sugar levels rapidly if consumed in excess. If you experience issues with your blood sugar or have diabetes it is good to keep an eye on your intake.
    • Onions are acidic and have a chance to trigger heartburn. Green beans contain lectin that can cause digestive problems. Cabbage also contains glucosinolates and raffinose that can cause bloating as well as gas.
